Lab-grown dairy may one day put cows out to pasture

George AndersonAnimal-free dairy products, including cheese, ice cream, and yogurt, are finding their way to store shelves as dozens of companies create milk proteins from yeasts or fungi. Lab-grown dairy doesn't contain antibiotics, cholesterol, growth hormones, or lactose, and their manufacturing doesn't come with the greenhouse gases produced by cattle. General Mills, Nestlé, and Starbucks have lined up as customers.
