Brooklyn restaurant is a zero waste operation

Rhodora, a wine bar and restaurant in the Fort Greene section of Brooklyn, is one of a growing number of restaurants around the U.S. that do not send any trash or food waste to landfills. To get to zero waste, the restaurant needed to rethink almost every aspect of its business, including finding suppliers that ship in containers made in reusable plastic or fully recyclable cardboard. Restaurants in the U.S. generate $25.1 billion annually in food waste, according to ReFED, a nonprofit with a mission to reduce food waste.
