Ruby chocolate joins dark, milk and white

Barry Callebaut AG, the largest cocoa processor in the world, has created the first new natural chocolate color in more than 80 years. Ruby chocolate uses a special cocoa bean that has a berry flavor that is both sour and sweet. The company reports the new chocolate has tested well in Britain, China, Japan and the U.S.
